Beefy’s Master Class

The week has well and truly started. Lucky moi has three days off to reflect, relax and EAT while watching the tennis! I have also had time to finally write a post about the amazing master class I was invited to by Beefy’s restaurant with chef Tom King on 5/7/2019.

Upon arrival we were greeted with Hampshire Gunpowder Gin & Tonics, locally brewed by Winchester_distillery. Then with our mains we were spoilt with Chardonnay by Ian Botham wines.

Starter: Labneh on Croute

The starter was Labneh on Croute, This was my first time trying Labneh cheese and it was delicious. The texture was creamy and the sourness to it was perfect with the croute. The chef talked through how to make the Labneh which sounded pretty simple. I have yet to make it; I will save the method and results for another post. Though the starter was simple it was full of flavour and perfect for a small soiree as it was easy to put together!

Main: Chalkstream Trout, Salad with Labneh and Pink Grapefruit

The main was Trout. Not my favourite fish to have but all I can say is WOW! I have a new found respect for trout. The Chef is an absolute genius marrying these ingredients as they worked together in a spectacular fashion. The citrus of the grape fruit put with the sour labneh and the delicate mild flavour of the trout was just a treat. It was like a small firework of flavour bursting in your mouth.

Dessert: Beefy’s Summer Pudding

Last but not least…dessert! Full of beautiful locally sourced berries, clotted cream and chantilly cream, this dessert was a piece of heaven. The toasted pecans sprinkles on top also enhanced the flavours of the berries as well as making the dish look pretty. Beefy’s Summer Pudding was divine and lived up to the rest of the menu.

Chef King was absolutely brilliant guiding us on how to cook and put together his menu as well as giving us his tips to make them perfect. His passion for cooking beautiful food shone through thus making the whole experience enjoyable and light. I will never forget about toasted pecans!!

Chef Tom King

The master class was a lovely and unique experience. From the setting, locally sourced food and the interaction with the chef made this a must do activity and a restaurant to visit over and over for its beautiful food.
